FIELD: fat and oil industry.
SUBSTANCE: invention relates to oil and fat industry and can be used as a food product, biologically active additive, pharmaceutical composition. Oil extract based on, enriched with inorganic form of iodine - potassium iodide, sprouted chickpea seeds in pumpkin seed oil in ratio chickpea:oil of 1:1. Extraction is performed by infusing with regular stirring for 10 days in dark place at temperature of 40 °C with subsequent determination of iodine content in obtained extract.
EFFECT: invention enables to obtain oil extract, which has optimal for human health fatty acid composition, promoting normalising lipid metabolism (increased content of phospholipids), has antiseptic, antioxidant and hepatoprotective properties (due to recovery of structural-functional properties of biological membranes of hepatic cells and cell organelles).
