SUBSTANCE: invention relates to the food industry. Disclosed is a method for enriching amaranth seeds with selenium, involving soaking and sprouting seeds in an aqueous solution of sodium selenite at temperature of 20–22 °C. Concentration of sodium selenite in aqueous solution is 0.04–0.06 g/l. Amaranth seed sprouting is carried out for two days on an impregnated and periodically moistened filter paper with sodium selenite solution with red light irradiation at wave length 640–720 nm and light flux area of 35 mcWt/cm2 for 6–8 hours a day to achieve length of sprouts of 3.8–4.2 mm.

EFFECT: invention increases content of selenium in sprouted seeds.
