FIELD: food industry.
SUBSTANCE: invention relates to food industry, in particular to fast food. Dried instant noodles method includes, as step of drying unroasted noodle, a step of placing gelatinised noodle strands in a holding vessel for drying noodles and feeding an air stream at a rate of 50 m/s or more from top into holding vessel to weight of noodle strands, thereby performing drying. Holding vessel used at drying step has such a shape that intermediate portion of bottom surface to side surface (side wall portion) is formed as a curved surface with a radius of curvature of 5 to 15 mm.
EFFECT: proposed method for drying instant noodles provides unroasted noodles which are easily untangled without sticking of noodle strings and has excellent maintainability.
