FIELD: food industry.
SUBSTANCE: invention relates to uncooked fresh noodles in the form of a coil used as instant noodles. The fresh noodles in the form of a coil are represented by an essentially flat coil wherein multiple noodle strings overlap one another. The noodles production is characterised by noodle dough cutting and produced strings laying onto the conveyor in the conveyor movement direction. Each of the noodle strings forming a fresh noodle coil has curves and repeatedly forms loops on the conveyor. The loops are located so that they are sequentially displaced in the direction opposite to the conveyor movement direction. Each noodle string trajectory is not synchronised with the trajectory of a neighbouring noodle string. Each noodle string overpasses and overlaps a neighbouring noodle string so that every noodle string loops position is displaced relative to the neighbouring noodle strings loops position; strings overlapping one another after steaming, extension, cutting and drying provide for noodle strings that become essentially straight during cooking using hot water.
EFFECT: invention allows to produce straight noodle strings after cooking using hot water preserving the existent technological lines to the maximum possible extent and without any special additive usage.
