FIELD: food industry.
SUBSTANCE: method for production of noodle strings where a dough sheet is cut using a device with cutting blade rollers that includes at least a pair of such cutting blade rollers, scraper elements and air flow supply means. The dough sheet is passed through the cutting rollers thus cut into longitudinal noodle strings; dough strings are removed from the blade rollers using the scraper element with division into the upper and the lower strings of noodle coils; an air flow is supplied onto cut noodle strings from the air flow supply means.
EFFECT: stable production of essentially straight noodle strings without expressed crosswise corrugation even in a high-speed production line.
