Also described is a method of producing polyglycerol composition, involving reaction of two or more glycerine monomers representing glycerolcarbonate monomer and acetylated glycerolcarbonate monomer with polymerisation initiator, which is a glucoside diester or sorbitan diester of formula: , where Z is an nodal structure, which is methylglucose derivative or sorbitan derivative; each Nu is a nucleophilic group containing -OH; each Hphob represents a hydrophobic functional group, such as oleate; each L′ is a primary binding group, such as -O-; h take on values from 1 to 12; b take on values from 1 to 11; h+b is equal to at least 4, and h/h+b is more than 0.35.
