FIELD: food industry.
SUBSTANCE: method involves preliminary processing of fish processing wastes and girasol, their grinding until fine powder, mixing, adding salt containing potassium, magnesium and reduced amount of sodium chloride, mixing and moulding of product. Fish processing wastes used are vertebral ridges and rib bones, which before milling are subjected to heating to temperature of 112-115 °C under pressure 0.3-0.4 MPa for 10 minutes. Mixture is added with sodium alginate in form of 20-22 % aqueous solution. Moulding is performed for 1-2 cm thick layers, after which layers are subjected to dehydration at 16-20 °C for 6-9 hours. All ingredients are used at specified weight ratio.
EFFECT: invention ensures production of fish product with long storage life.
