FIELD: food industry.
SUBSTANCE: invention relates to dairy industry. NF-concentrate is sampled, active acidity (pH) is measured, test amount of alkali solution is introduced, value of change of acidity is determined and alkali consumption is converted to required value of change of acidity using the following formula:
EFFECT: invention allows to consider the change of buffer properties of whey after concentration and increase technological and organoleptic properties of the raw material, thus preventing introduction of excess amount of alkali.
