FIELD: food industry.

SUBSTANCE: invention relates to dairy industry. NF-concentrate is sampled, active acidity (pH) is measured, test amount of alkali solution is introduced, value of change of acidity is determined and alkali consumption is converted to required value of change of acidity using the following formula: V a = v c ( p H g p H 0 ) p H 1 p H 0 V s , where: Va is the amount of alkali solution for neutralization of NF-concentrate volume Vto, DM3; Vc - volume of NF-concentrate of quark whey to be neutralized, dm3; pHg is the given value of active acidity of NF-concentrate; pH0 - initial value of active acidity of NF-concentrate; pH1 - value of active acidity of NF-concentrate sample with the volume of 1 dm3 after adding alkali solution in the volume of Vs; Vs is the amount of alkali solution, added to NF-concentrate sample, dm3.

EFFECT: invention allows to consider the change of buffer properties of whey after concentration and increase technological and organoleptic properties of the raw material, thus preventing introduction of excess amount of alkali.
