SUBSTANCE: invention relates to food industry. Proposed is a low carbohydrate highly instant chocolate product representing a drops, to obtain which a mass is used with the average particle size of 15-35 mcm consisting of cocoa component, cocoa butter, inulin, oligofructose, dry milk, an emulsifier, a flavouring agent, a sugar substitute and xanthum gum at the following initial components ratio, wt%: cocoa butter 10.37-16.37; inulin 11.6-17.6; oligofructose 11.6-17.6; dry milk 1.1-1.4; emulsifier 0.3-0.5; flavouring agent 0.01-0.1; sugar substitute 0.03-1.0; xanthum gum 0.35-0.45; cocoa component - the rest. Herewith the cocoa component is selected from: ground cocoa, cocoa powder or mixture thereof, the sugar substitute is selected from: stevioside, sucralose, polyols or mixtures thereof, the emulsifier is selected from: lecithin, monoglyceride, diglyceride or mixture thereof, herewith the drops size at least in one spatial dimension ranges from 3 to 10 mm, and the drops shape can be a hemisphere, a drop, a caviar, a lens, a dragee, a lentil , a granule, a pebble, a ball, an egg, a pad, etc.
EFFECT: invention provides creation of a functional product for people with healthy alimentation adhering to low-carb diet, easy-to-use, having resistance to fat bloom and longer shelf life, without changing the structure and the shape, low hygroscopicity, having fast, uniform, uniformly-homogeneous solution, without occurrence of visible oil to produce sedimentation-stable beverages or desserts, for a long time having high organoleptic indices, saturated aroma and chocolate taste, without metallic off-flavor.
