FIELD: food industry.
SUBSTANCE: invention relates to dairy industry and concerns a method of determining content of fat and protein in milk, characterised by that, in a milk sample, dynamic surface tension is measured on a tensiometer operating on principle of maximum pressure in bubble, obtained values of dynamic surface tension are used to determine protein and fat content in milk using regression-correlation analysis formulae, determining relationship between fat and protein content in milk with its dynamic surface tension.
EFFECT: invention provides faster and easier determination of fat and protein content in milk.
