FIELD: biotechnology.

SUBSTANCE: invention relates to biotechnology, food and fodder industry. Secondary products of fish cutting are washed with running water t=12 °C for 2–6 hours. Raw material is soaked in water for 24 hours and washed again 3-4 times with running water. Raw material is degreased with an alcohol-ether mixture in ratio 1:1 for 2–4 hours. Raw material is demineralised with 3 % acetic acid solution during 12–24 hours at t=18–25 °C with subsequent neutralization with 2.5 % sodium hydroxide solution to pH 5.8–6.2. Obtained mixture is washed again with running water for 1 hour and minced with a grate diameter of 9–12 mm. Obtained mass is hydrolysed with a collagenase solution with activity of 60 units/g in amount of 0.3 % to the weight of material for 12–24 h at t=37 °C. Enzyme is inactivated by heating hydrolyzate at temperature t=80 °C for 10 minutes with subsequent hydrolyzate centrifugation. Obtained hydrolyzate undergoes sublimation drying for 30 hours at tin=-50 °C and tout=25 °C. Dry mass is ground in mill to uniform powder and hermetically packed in polyethylene bags.

EFFECT: invention provides rational use of secondary resources of fish-processing industry, production of hydrolyzates of high biological value, reduction and simplification of technology for producing hydrolyzates.
