FIELD: food industry.
SUBSTANCE: invention relates to food industry and can be used in production of dietary protein products of type of desserts, creams, souffle or portioned products with protein core. Preparation comprises mixing defatted milk, buttermilk, a fat mixture with vitamins, natural colouring agent recovered from pumpkin. Method comprise emulsification, pasteurisation, cooling, introduction of a starter of bifidobacteria, Bifidobacterium bifidum 83 strain, and starter consisting of a mixture of two strains Lactobacterium acidophilum No. 6 and Lactobacterium plantarum VKPM V-2647. Used starters are taken in specified ratio. Method includes adding simultaneously, and total amount thereof is 3.0-4.0 wt%. Method comprises ripening under certain conditions. After ripening, specially prepared corn-millet porridge 7.0-10.0 wt% is added.
EFFECT: invention enables to obtain a dietary protein product using natural raw material, with preventive medical properties, having high biological and nutritional value.
