FIELD: food industry.
SUBSTANCE: synbiotic composition contains bifido- and/or lactobacteria, gum-arabic or a mixture of gum-arabic with fructo-olygosaccharides, vitamins C and B3, L-arginine, sodium or potassium acetate and skimmed milk with dry substances content 10-12 wt %. According to one version of the method skimmed milk sterilisation or pasteurisation proceeds in the presence of gum-arabic, L-arginine, sodium or potassium acetate. Added to milk chilled to starting temperature are bifido- and/or lactobacteria, vitamins C and B3. then one proceeds with ripening. According to the second version of the method implementation one adds gum-arabic or a mixture of gum-arabic with fructo-olygosaccharides, vitamins C and B3, L-arginine, sodium or potassium acetate to sterilised or pasteurised skimmed milk chilled to starting temperature and proceeds with ripening.
EFFECT: invention enables production of a symbiotic composition with a higher content of probiotic cultures (108-109) per 1 cm3 and ensures a high degree of probiotic cultures livability preservation in the course of finished products storage.
