SUBSTANCE: invention relates to fat and oil industry. Method of extracting an unsaponifiable fraction, contained in oil or solid vegetable fat, in oil originating from microorganisms, in an oil concentrate or fat or oil originating from microorganisms, or in a secondary product of industrial purification of vegetable oils, such as a waste steam after deodorization and distillates from physical cleaning or oil, originating from microorganisms, including at least: a) a step for converting said oils, vegetable fat or a by-product of industrial purification of vegetable oil or oils, originating from microorganisms, in a water-alcohol solution, in particular, through saponification stage, a’) a step of controlling alcohol content in aqueous-alcoholic solution obtained after step a), to obtain alcohol content in range from 10 to 50 wt%, and b) step for extraction of water-alcohol solution, during which oil fraction is separated from unsaponifiable fraction by extraction in a liquid-liquid system. At least extraction step in a liquid-liquid system at step b) is performed using a first solvent system, including a solvent selected from solvents, containing at least 5 carbon atoms and one or two oxygen atoms in form of ether functional group, or ketone, or ester in amount of at least 50 vol% with respect to total volume of first solvent system, as well as fraction, obtained using said method. Solvent which contains at least 5 carbon atoms and one or two oxygen atoms, is selected from methyl ketones, propionates, propyl ethers and their mixtures.
EFFECT: invention enables to obtain high total output during extraction, improves degree of extraction of one or more unsaponifiable fractions, and disclosed method is more efficient and environmentally safe.
