FIELD: food industry.

SUBSTANCE: method for preparation of coriander fruits for storage and processing comprises cleaning industrial coriander from trash, separating the coriander into fractions of whole and cracked fruits. Each faction separately is additionally cleaned from small and light trash. Wherein the fraction of cracked fruits is divided into two flows, reducing the layer thickness of the sieve. The cracked fruits are processed without storage. The humidity of whole fruits is determined, and whole fruits are separated as per humidity. The whole coriander fruits with the humidity up to 14% are stored until the maximum accumulation of essential oil. Whole coriander fruits with the humidity of 14% or more are dried to the humidity of 10-12% without intermediate storage and sent for processing, or treated with propionic acid, stored, and then dried to the humidity of 10-12% and sent for processing.

EFFECT: increasing the degree of the coriander fruits cleaning from trash, and possibility to significantly increase the high-quality essential oil yield thereof.
