FIELD: food industry.
SUBSTANCE: device 1 for preparing milk foam is proposed, in which the Couette flow and high tangential stress is used, which is applied respectively to the milk-air mixture between two concentrically located cylinders 2, 3. The cylinders rotate relative to each other. Significant tangential stress results in the formation of an emulsion consisting of milk and air, which is the basis for the foaming effect after the emulsion flowing out of the gap 6 between the two cylinders 2, 3 and its extension. The parameters of the device 1, which mainly influence on the foaming effect, are the width of the gap 6 and the relative frequency of the cylinders rotation.
EFFECT: improving foam stability.
