FIELD: food industry.
SUBSTANCE: method of baking pancakes involves applying a thin layer of dough and heating it from two sides. Applying a thin dough layer is carried out continuously on the metal surface of the conveyor belt. Heating is performed from one side by means of thermal electric heaters, and from the other side - by means of a scanning laser beam created by a laser emitter. The device for baking pancakes includes the heating surface for a thin dough layer with a heating source on one side and an additional heater on the other side. The heating surface of the thin dough layer on one side is made in the form of a conveyor belt. The additional heater comprises at least one laser emitter made with the possibility to scan the laser beam. The laser emitter is made with the possibility of excitation molecular oxygen into singlet states.
EFFECT: increasing the performance of the pancake-baking process.
