FIELD: food industry.
SUBSTANCE: invention relates to a method of producing solid milk. Method involves a compression step, on which particles of milk powder are compressed to produce a compressed block of milk, then a moistening step, followed by a drying step. Compression step is performed with compression ratio from 50 % to 80 %. At moistening step water is sprayed onto outer surface of pressed block of solid milk in amount of 0.1 mg to 8 mg/cm2 area of said outer surface, wherein duration of moistening step is less than 1 s. Drying step follows moistening step for less than 10 s, and duration of drying is less than 30 s.
EFFECT: method enables to obtain solid milk having a core/crust structure, wherein average thickness of crust is at least two rows of milk particles, with a combination of sufficient strength, suitable abrasion strength and good solubility.
