FIELD: food industry.
SUBSTANCE: biologically active additive (BAA) having antioxidant properties, is represented by a powder obtained from secondary resources of fruit processing by their treatment in the ultrahigh frequency electromagnetic field with the frequency of 2,450 MHz, drying, cooling and grinding. The secondary fruit processing resources are represented by secondary resources formed in the pear mashing process while producing puree, and its treatment in the electromagnetic field of ultrahigh frequency is carried out at the heating rate to the temperature of 55-60°C equal to 0.25-0.45°C/s.
EFFECT: invention allows to create a BAA for food, which has high antioxidant properties and can be recommended as an independent preventive means, and also for creating functional, specialized and enriched foods.
