FIELD: food industry.
SUBSTANCE: invention can be used for obtaining a high-quality biologically active additive (BAA) with antioxidant properties. The BAA to food is a powder obtained from secondary resources of fruit processing by means of their treatment in the ultra-high frequency electromagnetic field with the frequency of 2,450 MHz, drying, cooling and grinding. The secondary fruit processing resources are represented by secondary resources formed in the pear mashing process while producing puree, and their treatment in the electromagnetic field of ultrahigh frequency is carried out at the heating rate to a temperature of 55-60°C equal to 0.3-0.5°C/s.
EFFECT: invention allows to create a BAA to food, which has high antioxidant properties and can be recommended as an independent preventive means, and also for creating functional, specialized and enriched foods.
