FIELD: food industry.
SUBSTANCE: invention relates to food industry and can be used for production of a high-quality biologically active additive (BAD), which has antioxidant and hepatoprotective properties. Biologically active food additive is grinded secondary resources of grapes processing, as which takes husks of grains. In this case, before grinding, husks are processed in electromagnetic super-high-frequency field with a frequency of 2,450 MHz at a heating rate up to 40–45 °C equal to 0.6–0.7 °C/s, and grinding is carried out at a temperature of 18–20 °C.
EFFECT: invention allows to obtain biologically active food additive with high antioxidant and hepatoprotective properties.
