FIELD: food industry.
SUBSTANCE: natural honey is prepared by pre-heating. The honey is placed in the container equipped with a thermal jacket and a stirring device and brought to complete decrystallization for 24 hours at the temperature of 40-45°C. The honey is cooled to the temperature of 16-20°C. It is subjected to destruction by thermomechanical treatment at said temperature and the stirring device rotation speed of 36 rpm for 48-72 hours. The rotation is performed with alternating starts for 30-60 minutes and stops for 30-60 minutes. Nuts crushed to the particle size of 0.5-2.0 mm are added in an amount of 10-15 wt %. Then they are mixed with honey for 20-60 minutes and homogenized to homogeneous paste-like consistency. The finished product is pre-packed and hermetically packed. In a version of the method for producing paste-like products based on honey, blueberries or cranberries are added to it in an amount of 10-15% by weight, mixed for 20-60 minutes.
EFFECT: invention allows to obtain a souffle-like product with improved organoleptic characteristics.
