FIELD: food industry.

SUBSTANCE: plant for obtaining soy protein isolate comprises a unit for dispensing raw material, a unit for its grinding, a container for soaking raw material, branch pipes for the input of raw materials, water, alkali, process liquids and the output of products, devices for extracting raw materials, decanters for separating extract and fiber, a container for acid precipitation of the protein, a decanter for separating the protein, a container for washing the protein, a decanter for separating the washed protein, a device for drying the protein, and a device for packaging the finished product, all connected with pipelines. The unit is equipped with a gravitational-turbulent mixer located in front of the container for soaking raw material, a vortex mixer, an evaporation system and a condensate tank. The vortex mixer is located in front of the container for acid precipitation of proteins. Condensate drainage pipelines are connected to the unit for grinding the raw material, to the container for soaking the raw material, to the device for re-extraction of the raw material and the container for washing the protein. The pipelines for draining the process liquids from the decanter for separating the fiber and the decanter for separating the washed protein are connected to the gravitational-turbulent mixer. The gravitational-turbulent mixer can be made in the form of a vertical pipe with a spiral arranged inside it, and the branch pipes for the input of raw materials, water, alkali and process liquids are located in the upper part of the pipe. The vortex mixer is installed in the pipeline in front of the container for acid precipitation of proteins and is represented by a spiral funnel. The plant can additionally be provided with units for stabilizing, modifying and pasteurizing the proteins, installed in front of the drying device.

EFFECT: increasing the yield of high molecular weight protein due to ensuring the quality raw material preparation, reducing the stay time of the raw material at extraction stages, using all liquids in the process after the precipitation and washing of proteins.
