FIELD: food industry.
SUBSTANCE: invention relates to sugar industry. Method for the preparation of sugar syrup is proposed, which involves dissolving crystalline sugar in hot water. Syrup is mixed with a pectin extract containing 1.5–3.5% pectin at pH 4.0–6.0. Syrup is then brought to a predetermined content of 65–72 % solids at a temperature of 85–90 °C and subjected to cavitation-cumulative treatment by feeding it at a speed of 10–15 m/s into the supercavitating static device.
EFFECT: invention provides improvement in quality of the finished sugar syrup.
