FIELD: sugar industry.
SUBSTANCE: disclosed is a method of producing sugar syrup enriched with pectin and black coffee extract, according to which sugar crystals are fractionated to size 0.18-0.20 mm and dissolved in hot water. Obtained syrup is mixed with a pectin extract, subjected to double cavitation-cumulative treatment by feeding it first at rate of 12-17 m/s into a supercavitation static apparatus, and then directed for acoustic cavitation with operating frequency of apparatus in range of 18-24 kHz, where black coffee extract is added to sugar syrup.
EFFECT: invention allows to achieve uniform distribution of additives in sugar syrup with complete dissolution of components.
