FIELD: food industry.
SUBSTANCE: sugar-containing product manufacture method is as follows: sugar-containing solution is subjected to inversion treatment by way of contact with activated carbon having pH value equal to 2-4.5 at a temperature of 66-70°C and is decolourised with alkaline activated carbon at a temperature of 78-80°C in two stages with intermediate filtration between them. The quantity of carbon introduced at the first stage is equal to 0.1-0.5%, at the second stage - 0.2-0.4% of the solution weight; the first stage duration is 18-20 minutes, the second stage duration being 10-20 minutes. Then one performs filtration with addition of kieselgur in an amount of 0.6-1.2% of the solution weight into the solution being decolorised and condensation till dry substances content is equal to 55-60%, proceeds with afterfiltration and mixing with stevioside natural sweetener in an amount of 0.4-3.0% of the solution weight and fructooligosaccharide in an amount of 1.0-2.0% of the solution weight by way of passing through a cavitation device at a rate of 10-15 m/sec at a temperature of 90-102°C. Then one performs concentration in a heat medium flow at a temperature of 110-130°C till moisture content is equal to 1.5-3.0%.
EFFECT: improvement of the quality of sugar-containing product with its functional properties strengthening.
