FIELD: food industry.
SUBSTANCE: invention relates to the food industry, in particular to the substandard bread processing and the production of bread crackers based on it by extrusion. Method for processing substandard bread is proposed, which includes grinding bread into crumbs, moistening crumb to a mass fraction of moisture of 26–28 %, extruding the mass, drying the molded semi-finished product to a moisture content of 9–10 %, followed by its deep-frying until a bread cracker, while before moistening, the bread crumb is mixed with a wheat germ in the amount of 5–15 % of its mass.
EFFECT: invention provides a method for non-waste production and enhancing the nutritional value of the product.
