SUBSTANCE: method comprises producing sausage products (S), such as sausages, containing a pasty filling material in a tubular or bag-shaped package (M), by means of clamping device (1), and clamping device (1) for the production of sausage products (S). Method includes feeding the fill material in the feeding direction (F) to a tubular or bag-shaped package (M), which is applied to filling tube (10) and closed at the front edge by a cover-type closure means (C); restricting the movement of the tubular or bag-shaped package (M) when contracting with filling tube (10) by using packing brake assembly (16) located on filling tube (10); collecting the filled tubular or bag-shaped package (M) with collecting means (30) located behind filling tube (10) to form the bundle-shaped (P) package; and installing and closing at least one closure means (C) on the bundle (P) of the package to close the filled tubular or bag-shaped package (M). Packing brake assembly (16) reversibly moves along filling tube (10) during the feeding of the filling material into a tubular or bag-shaped package (M).
