SUBSTANCE: group of inventions relates to the food industry, namely to a method and device for manufacturing sausage products using a casing fastening device. Method of producing sausage products comprising a fluid filler in a tubular or bag-like packaging shell using a casing fastening device having a clip control unit, comprises steps of feeding filler in direction of feeding into tubular or bag-like packing shell, stored on filling tube and closed at front end of closing means, such as closing clip, collecting into folds of filled tubular or bag-like packing shell by means of a fold collection means located downstream of filling tube, to form a folded section on it, and applying and pressing at least one closing means on the folded portion to close the filled tubular or bag-shaped packing shell, as well as steps of starting the manufacturing process, automatically obtaining at least one value of at least one parameter of the casing fastening device, supplying the obtained value with an offset value to form a range of allowable values of said parameter and using the formed range of tolerable values of said parameter to monitor said parameter during further production process.
