SUBSTANCE: invention can be used to determine the characteristics of an emulsion. Sensor according to the invention comprises an electric resonant transducer comprising a top winding and a bottom winding, connected by opposite ends in parallel to a capacitor, wherein said top winding provides excitation and detection of the response of the bottom winding, wherein mutual induction of the top winding is used to tap the signal from the bottom winding, said mutual induction being used to measure the real and imaginary parts of the impedance spectra of the bottom winding parallel to said capacitor and said top winding, wherein said impedance spectra are determined based on the electrical response from the bottom winding to the top winding of the electric resonant transducer when said bottom winding is adjacent to the emulsion, and each of said measured values of the real and imaginary parts of the impedance spectra of the bottom winding are independently used to determine the composition of the emulsion.
EFFECT: invention increases sensitivity, accuracy and speed of measurements.
