FIELD: food industry.
SUBSTANCE: invention relates to the tea industry. Method for determining the total ash content of tea is that a ground sample of tea weighing 1.0–1.5 g is placed in a porcelain crucible 10 cm3 in volume, 2 cm3 alcohol solution of magnesium acetate is added to the sample, prepared by dissolving 1.61 g (CH3COO)2Mg⋅2H2O in 100 ml of a 96 % aqueous solution of ethanol, after 1–2 minutes the solution in the crucible is ignited and after its burning, the crucible with charred sample is placed in a muffle furnace in which the sample is calcined at a temperature of 525±25 °C for 1.5 hours prior to the formation of ash, then the crucible with ash is cooled and weighed, the total ash content in the shredded tea sample, expressed as a percentage by weight in terms of dry substance of the sample, is calculated by the formula.
EFFECT: invention is aimed at the development of new accelerated methods for assessing the quality of raw materials and finished products.
