FIELD: fat-and-oil industry. SUBSTANCE: invention aims at technically and chemically controlling hydrogenation process and, namely, quantitatively controlling nickel in fresh, exhausted, and restored catalysts used to hydrogenate fats on silicate, aluminosilicate, and carbon carriers, as well as in fat suspensions of catalysts. Sample taken from pressure filters is mineralized by adding 0.5-1.0% of alcohol-ether solution of hydroxyethylidenediphosphonic acid at ratio from 1:3 to 1:6, respectively, to form miscella which is further subjected to acid treatment using mixture of concentrated hydrochloric and nitric acids in ratio 2:1, while heating the mixture at 20-50 C for 30-60 s. Reaction mixture obtained is watered with distilled water at ratio , (1-2):1 and submitted to spectrophotometric examination. EFFECT: facilitated hydrogenation control. 1 tbl
