SUBSTANCE: monitoring system includes a measuring unit, comprising at least one sensor for determining current measurement data of a heated food product, processing and monitoring units. Processing unit is used to determine the current data on the characteristics from said current measurement data by applying a transformation, in which the dimensionality of the current measurement data is reduced. Measurement data with the highest dispersion over time in the at least one training heating process are given the greatest weight. Monitoring unit is configured to determine the current state of the heating process in the current heating process of the monitored food product by comparing said current characteristic data with reference data on the characteristics of the reference heating process.
EFFECT: invention provides automation of technological stages of food processing.
