FIELD: food industry; biotechnology.
SUBSTANCE: group of inventions relates to food industry and biotechnology. Meat substitute comprises at least one isolated and purified iron-containing protein, which is not derived from an animal source, and adapted for human consumption. Said protein accounts for 10 % or more of the protein content by weight. Soybeans or peas can be used as said protein. Hemoglobin, myoglobin, leghemoglobin, non-symbiotic hemoglobin, chlorocruorin, erythrocruorin, neuroglobin, cytoglobin, protoglobin, truncated 2/2 globin, HbN, cyanoglobin, HbO, Glb3, and cytochromes, HGbl, bacterial hemoglobins, ciliate myoglobins, flavohemoglobins are used as an iron-containing protein. As an option, a meat substitute comprises a hemo-containing protein, vegetable protein in an amount of 10 wt % or more, sugar and a sulfur-containing compound, wherein the substitute does not contain animal sources.
EFFECT: group of inventions provides a meat substitute that accurately mimics the taste, texture, or color of a meat product.
