FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to plant-based meat substitutes. A food product copying meat includes: from 0.01% to 5% by weight of protein containing heme iron; 10% by weight or more of plant protein; sugar, and amino acid or a sulfur-containing compound. The food product copying meat does not contain animal products. The preparation of the food product copying meat leads to obtaining at least two volatile compounds that have a small associated with meat compared to the reference food product copying meat that does not contain protein containing heme iron.
EFFECT: invention allows for obtaining a meat-substituting composition that precisely reproduces the taste, texture, aroma or color of a meat animal product.
