FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method for controlling the process of coffee beans roasting according to which, during the roasting process, the actual value of the ejection of solid particles of coffee beans is measured to determine the profile of the ejection of solid particles as a function of time. And, based on the profile, the actual degree of roasting of the coffee beans is determined, and based on the degree of roasting, at least one characteristic of the roasting process is determined and set.
EFFECT: this method allows to conduct high-quality roasting of coffee beans in a domestic frying device.
