SUBSTANCE: disclosed is a method of roasting coffee beans using roasting apparatus (10), which is located in a room and comprises roasting device (1) and smoke treatment unit (3) containing contaminant treatment device (32), configured to treat smoke (12) generated in the roasting device and prevent the release of air pollutants, including coffee aromas, into the room, wherein said roasting method includes a step of introducing coffee beans (8) into the roasting device and a step of heating said coffee beans for a period of time, and wherein a portion of the total amount of smoke generated during the heating step is released into the room without treatment in said contaminant treatment device (32), made with possibility to prevent release of coffee aromas into room. Pollutant treatment device (32) is an afterburner, or a catalytic converter, or a device for removing pollutants from the room, or a filter configured to trap coffee aromas, including a carbon filter or a charcoal filter, and roasting apparatus (10) comprises smoke collection device (2) connected to the roasting device and configured to collect smoke generated in the roasting device, and smoke removal device (31) located between the smoke collection device and the contaminant treatment device (32). Described also is an apparatus for roasting coffee beans and a smoke treatment unit included in said apparatus.
