Disclosed is a method of roasting coffee beans in a room, comprising obtaining, when performing at least one roasting operation, the required roasting input data for said at least one roasting operation with said required input data, obtaining access to information on a room and a roasting device for coffee beans, as well as before initiating at least one roasting operation: determining the concentration of each contaminant formed in the room during said at least one roasting operation, for each pollutant comparing a certain concentration of said pollutant formed in the room, with concentration of said pollutant permitted in accordance with local health and safety standards and depending on whether the concentration of each pollutant is lower or higher than the permitted concentration, performing at least or displaying a hazard warning. Also disclosed is a system for roasting coffee beans in a room and a machine-readable data medium containing instructions for controlling and implementing the method of roasting coffee beans.

EFFECT: group of inventions enables to predict and ensure safe operation of the roasting system in a room in accordance with health and safety standards.
