FIELD: food industry.
SUBSTANCE: invention relates to the food industry, namely to a crispy co-extruded food product. This product comprises an extruded shell and an extruded filler contained within the extruded shell. Extruded shell has a flour component comprising from about 37 % to about 92 % by weight of wheat flour and from about 3 % to about 30 % by weight of sugar. Weight of the extruded filler is from about 20 % by weight to about 75 % by weight of the total weight of the co-extruded food product. Total co-extruded food product has a density of about 0.45 g/ml to about 0.85 g/ml. Invention also relates to a method of co-extruding a baked food product, which comprises mixing a coating material, containing from about 10 % to about 100 % by weight of wheat flour and from about 3 % to about 30 % by weight of sugar, mixing the filler material containing solid fat, liquid fat and sugar, and co-extruding the shell material and filler material in a filler: shell ratio of about 1:4 to about 3:1 to obtain an extruded cord.
EFFECT: co-extruded food product has a soft, well-balanced taste, a more delicate and delicate texture, which is essentially non-soiling.
