SUBSTANCE: invention relates to a method of the quantitative determination of furan and methylfuran in children's grain-based cereals. A method of the quantitative determination of furan and methylfuran in children's cereals based on grains by gas chromatography using headspace analysis, characterized by the introduction of a test sample of porridge weighing 5 g into a vial, placing the vial in an equilibrium vapor dispenser, heating to a temperature of 80°C and keeping at this temperature for 20–30 minutes to establish phase equilibrium, then 1 cm3 of the resulting vapor phase is taken from the vial with a syringe, it is injected into the chromatograph column and analyzed on a gas chromatograph with a mass selective detector, while a chromatogram is taken, determining the peak area, and the retention time for furan is 8.809 min, for methylfuran — 10.997 min, and the concentration of furan and methylfuran is determined using a calibration graph characterizing the dependence of the peak area on the content of the test component on the chromatogram, while gas chromatographic analysis is carried out on a VOC capillary column -5MS 90 m×0.250 mm×0.250 μm 90 meters long, 0.250 mm inner diameter and 0.250 μm stationary phase film thickness.
EFFECT: development of a reliable and selective method of the quantitative determination of furan and methylfuran in baby cereals by the headspace method.
