SUBSTANCE: invention relates to food industry. Method for producing a sugar-containing mixture used for preparation of a marinade according to which a food additive is introduced into the iodinated crystalline sugar, are mixed until a uniform consistency is obtained and dried to a moisture content of not more than 0.02 %. As a food additive, a premixed powder mixture of sumac, dill, hyssop, asafoetida and juniper berries is used in a ratio of 2:2:2:1:3 in an amount of 0.02–0.05 mg/kg to the mass of iodinated crystalline sugar.
EFFECT: method makes it possible to obtain a product that maintains a stable structure during its transportation and long-term storage.
