FIELD: poultry processing industry.
SUBSTANCE: invention relates to the poultry processing industry, namely, functional food products based on a bird's egg. Functional food product contains melange coagulated cereal from the egg, obtained on the basis of biofortification in the process of growing chickens, dry egg shell powder, solution of citric acid 5 %, salt, table salt and water, in following proportions, pts.wt: egg melange – 89.5–92.0; citric acid solution 5 % – 4.5–4.9; table salt – 0.7–0.85; dry egg shell powder with an organic calcium content of at least 70.0 % – 0.5–2.0; water – 1–2.
EFFECT: invention allows to expand the assortment of products that promote the optimization of nutrition of consumers with calcium metabolism disorders.
