SUBSTANCE: invention relates to velvet antler industry, in particular to methods for preserving antlers. Method for preserving siberian stag antlers comprises sorting antlers into three groups according to the size of the main beam circumference between the second and third tines of 12–15 cm, 16–18 cm, 19–21 cm, respectively, two-day cooking of antlers by immersion in hot water with break-cooling after each immersion and alternating wind and heat drying. All three groups of antlers are cooked separately by tripling immersion of antlers in water with a temperature of 93–96 °C at the modes corresponding to each group. First heat drying is carried out at a temperature of 70 °C, second one is carried out in two days at a temperature of 65 °C and third heat drying – four days after the second drying at a temperature of 60 °C, and all wind drying is carried out at 8–10 °C. Wind and heat drying are carried out with forced air supply at a speed of 10–12 m/s.

EFFECT: proposed method for preserving siberian stag antlers allows optimizing the preservation process by reducing the number of factors subject to subjective estimation while gentle preservation modes, ensuring the high quality of the final product by eliminating saprogenic processes and achieving homogeneity of biochemical processes within an antler and reduced preservation time.
