FIELD: food industry.
SUBSTANCE: invention relates to the confectionery industry. Method of making a multiple portion confectionary product comprises producing a dry foam portion with water content of less than 8% by weight, obtaining a chewing gum portion and combining the dry foam portion and the chewing gum portion. Step of obtaining a dry foam portion comprises steps of obtaining a mass of ingredients that contains at least 80% by weight of a bulk-forming sweetener. Mass of ingredients is then mixed and melted to form a molten mass of ingredients. Molten mass of ingredients is mixed with supercritical carbon dioxide and the resulting mixed molten mass of ingredients is expanded. Confectionery product obtained by this method is also provided.
EFFECT: invention makes it possible to obtain a confectionery product with multiple textures and at the same time with rapid initial and prolonged release of the sweetener due to different textures.
