FIELD: biotechnology.

SUBSTANCE: invention relates to biotechnology. Biotechnological method for the production of lactic acid involves the cultivation in the fermenters of the culture of Lactococcus lactis lactobacilli VKPM V-1700, and/or Lactococcus lactis VKPM V-2017, and/or Lactococcus lactis VKPM V-2018 in non-sterile conditions on a nutrient medium followed by neutralization of lactic acid during its production by a 5 % solution of sodium hydroxide. After reaching a sodium lactate concentration of at least 3 % after at least 6 hours, the fermentation medium is partially removed from the fermentor with a topping of the nutrient medium in the same volume. Stepwise centrifugation is then carried out. Culture liquid released from lactobacilli is fed into the bipolar dielectric membrane unit in a continuous mode. Lactic acid from the precast chamber of the electrodialysis unit is supplied for additional purification. Lactic acid is then evaporated in vacuum units to a concentration of 40 or 80 % and prepacked.

EFFECT: invention makes it possible to simplify the method for producing lactic acid and to reduce the amount of waste produced during its production.
