FIELD: food industry.
SUBSTANCE: invention relates to food industry. Method is proposed for the preparation of crystalline anhydrous dextrose, which involves the preparation of a raw syrup for crystallization, introduction of seed crystals of anhydrous dextrose into it, control of the formation of embryos. Initial syrup has a concentration of 75–84 % DI. As a primer, a pre-prepared alcoholic suspension of hydrated glucose crystals is used with one of the absolute alcohols selected from ethanol, propanol, butanol, isopropanol, isobutanol, in a ratio of 3:2, which is added to the syrup at a temperature of 45–80 °C in the amount of 0.5–50 g per 100 kg of syrup.
EFFECT: method ensures the production of high-quality glucose.
