FIELD: food industry.
SUBSTANCE: method includes the milk normalization and thermal processing, cooling up to the souring temperature, application of bifidobacteria and sour milk activated biomass, souring and cooling of the finished product. Bifidobacteria with the titre 106 CFU/ml is activated by keeping in the aqueous solution of shelf fungus melanin with the concentration not more than 10-5 g/ml, at the temperature 37°C for 20-40 minutes.
EFFECT: method allows to reduce the seed flow, the number of viable bifidobacteria in the finished product is increased in 100 times, and continues increasing during the shelf life of the product.
