SUBSTANCE: invention relates to meat processing industry. Disclosed is a method of producing a liver puff in a mould, which comprises preparation of raw materials, preparation of minced meat and moulding the product by layers, alternating unground pork skin and minced meat into the mould, heat treatment and cooling. Preparation of pig skin is carried out in a solution of hydrochloric acid with a concentration of 0.037 % for 24 hours, followed by washing in water for 5–10 minutes. Minced meat is made from beef head meat, half the proportion of pig skin, spleen, egg powder and whey protein concentrate.

EFFECT: method enables to obtain a product with an original layered structure and reduces energy costs associated with preparation of pig skin.
