FIELD: food industry.
SUBSTANCE: present invention relates to antimicrobial compositions that can be used for food preservation. Composition for food preservation contains the active ingredients: 1,125–31,875 U of glucose oxidase (GOD) per 100 g of the composition, 30,000–1,562,500 U of lactoperoxidase (LP) per 100 g of the composition, 1.275–6.25 % by weight of thiocyanate (SCN), 0–37.5 % by weight of glucose and excipients. Present invention also relates to the use of such a composition as a preservative for a food product and to food products containing such a composition. Method for preserving a food product, comprising adding 50–400 ppm of the above mentioned composition to a food or food component, is also provided.
EFFECT: invention makes it possible to obtain a composition providing a high antimicrobial effect without adversely affecting the organoleptic properties of the food product during storage.
