FIELD: food industry.
SUBSTANCE: invention relates to a preservative composition and to a canned food product containing such a preservative composition. The following is proposed: a canned food product containing a preservative composition consisting of at least 3 compounds selected from the following: hexanal, E-2-hexenal, E-2-hexenol, E-linalooloxide, methanol and methyl salicylate, wherein the said canned food product contains from 10 up to 10,000 ppm of preservative composition and less than 60 ppm of linalool. Also the following is proposed: a method of producing the said canned food product, including adding a preservative composition consisting of at least 3 compounds selected from the following: hexanal, E-2-hexenal, E-2-hexenol, E-linalooloxide, methanol and methyl salicylate, to the food product, preferably a beverage susceptible to spoilage caused by microorganisms, the said canned food product containing from 10 to 10,000 ppm of preservative composition and less than 60 ppm of linalool.
EFFECT: invention ensures the production of food products with a low content of synthetic preservatives through the use of a preservative composition in the form of a combination of volatile aromatic substances with antimicrobial activity to reduce or prevent the proliferation of fungal microorganisms that cause spoilage in food products.
